Limus (pronouned ly-mus)
Introducing the newest member of our family, Limus (like Linus, but with an "m") the kaffir lime tree from Thailand! I ordered this tree months ago, but it was back ordered until further notice, so I was pleasantly surprised to return home and find that it had been delivered and my mom was taking care of it.
The kaffir lime tree is valued more for its leaves than for its fruit. The smell is quite intoxicating actually. Here's a bit of info on our new friend:
Kaffir Lime (CITRUS HYSTRIX): This is an essential herb for Thai cooking. The leaves are doubled-up back to back and the bush has 1 inch thorns. They look meaner than they are. Drop a few leaves in
with the coconut milk when you're making Thai curry. Thai chefs have been using them finely shredded in their cooking for generations.
The lime itself isn't used for much and it's not nearly as juicy as the limes you usually see, but maybe I can find something to do with them so they don't go to waste.

Posted by: Ani at July 31, 2005 05:28 PMLymus should meet Limey ;) Now that it's the summer time, you can leave it outside so that it gets more sun and grows bigger. When it starts to get cold, bring it indoors. Limey is outside but is much smaller since it's an offspring from my sis in law's huge kaffir lime bush. The limes may not be as good in Coronas but the zest is really good for the same things that the leaves are for.

I wonder how the limes themselves taste once they're dried. If the flavor is still strong and tart, they'd be good for Persian food.
