I am now in fall mode, even though we are so far from fall temperatures here. Still, a girl can wish. :-) Tonight I made a a comforting, Moroccan lentil soup. It smelled wonderful while it was cooking and there is plenty left over for lunches this week. If you want a comforting, cold-weather soup, then this soup's for you!

INGREDIENTS:
2 onions, chopped
2 cloves garlic, minced
1 teaspoon grated fresh ginger
6 cups water
1 cup red lentils
1 (15 ounce) can garbanzo beans, drained
1 (19 ounce) can cannellini beans
1 (14.5 ounce) can diced tomatoes
1/2 cup diced carrots
1/2 cup chopped celery
1 teaspoon garam masala
1 1/2 teaspoons ground cardamom
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1 tablespoon olive oil
--------------------------------------------------------------------------------
DIRECTIONS:
In large pot saute; the onions, garlic, and ginger in a little olive oil for about 5 minutes.
Add the water, lentils, chick peas, white kidney beans, diced tomatoes, carrots, celery, garam masala, cardamom, cayenne pepper and cumin. Bring to a boil for a few minutes then simmer for 1 to 1 1/2 hours or longer, until the lentils are soft.
Puree half the soup in a food processor or blender. Return the pureed soup to the pot, stir and enjoy!
I *love* soup. It's so comforting and yummy! We've DEFINITELY been having fall temperatures here lately, but tomorrow is supposed to be in the 80s. NUTS!!!

Posted by: dazed at October 5, 2005 01:31 PMThat sounds very yummy and definitely comforting. Fall is definitely my favorite time of year - spices, apples and just lots of wonderful harvest produce.
Posted by: stef at October 5, 2005 02:41 PMA COLD front came through today and you need a light jacket all day! It has made me SO in the mood for soups, stews, mulled ciders simmering in the crock pot and lots of baking! I love fall!
Posted by: Allison at October 6, 2005 02:10 PMThat sounds just too good. We eat a lot of soup in the cool weather, and that sounds like one I should add to my list.
Thanks so much.
