It's been cold and rainy this week, so I decided to try my hand at some homemade Ciabatta bread to go along with the crockpot Minstrone soup I made. It turned out really well!
I'm posting the recipe as my own, because I took a recipe that made a few loaves, cut it down, put less of some things, and then added seasonings, so it's mostly mine. You'll notice though that some of the ounces are weird, and it's because I had to cut down the original recipe.
I made my dough in my bread maker.
You'll need:
6 oz water
1/2 tsp salt
1/2 tsp sugar
1/2 tbp olive oil
13 oz bread flour
1/2 tsp, plus a 1/4 tsp of yeast
2 cloves of garlic grated in
1 tsp fresh dill*
1 tbsp fresh rosemary*
1 tsp fresh basil*
1 tsp dried thyme
*You can used dried herbs, too. You can also use whatever herbs you want.
Directions:
1.Place ingredients in bread machine and choose the dough cycle. Let it do its thing.
2. Take out dough (it will be sticky) and make a ball. Cover for 15 mins.
3. Lightly flour a baking sheet. Form dough into a 3x14 inch oval. Place loaves on sheet, dimple the surface, and lightly flour. Cover, and let rise for 45 mins.
4. Preheat oven to 425 degrees.
5. Dimple dough again. Put loaf in the over and bake it for 25 to 30 minutes. If you want a crispier crust, spritz loaves with water every 5 to 10 minutes for a crispier crust. You can also sprinkle some garlic powder on the bread during the last time you wet it.
